At Home Easy Acai Bowl - By: Kayla Kosubinsky

 WHAT'S IN AN ACAI BOWL?

This acai bowl recipe is a healthy way to include all your favorite fruits such as strawberries, blackberries, blueberries, and banana blended with any kind of milk or water. Blended this creates a creamy smoothie served in a bowl.

You can top off your acai bowl with an assortment of fruits, nuts, seeds, crunchy granola and you’ve got yourself a great healthy way to start the day. Sometimes I even like to add peanut butter since I do have a sweet tooth.

Although most people eat this for breakfast, you can also enjoy this superfood at anytime time of day.

BERRY ACAI BOWL RECEPE

  • First, we will be using freeze dried açaí powder. You can find this in most health-conscious food stores or ordered online. Pictured to the right is the one I like to use.
  • For the base, I like use a mix of frozen berries such as strawberries, blueberries, blackberries, raspberries, and either a fresh or frozen banana. You can use any mixture of frozen berries you prefer.
  • If you want to add protein, add a scoop of whatever protein powder you like to use.
  • In a blender, place the berries, banana, acai powder, optional protein source and water/milk. Blend until smooth. Add extra water if needed (most likely you won’t need any).
    • Add whichever toppings you want such as banana slices, kiwi, raspberries, blueberries, cocoa nibs, granola, coconut, chia seeds, etc.
    • Serves up to 2 people.

It's as simple as that. Enjoy this delicious and addictive treat!

Gluten Free Staples You HAVE to Try, By: Kayla Kosubinsky

Gluten-free has become one of the most buzzed about diets talked about today. As I have recently become gluten intolerant, it has not been easy to transition my diet to all gluten free options. Although being gluten-free can be a healthier and a more satisfying option, it still takes a lot of planning and consistancy to successfully eat gluten-free. Luckily, since eating gluten-free has become more of the norm in the last few years, there are plenty of options for a healthy and delicious gluten-free meal. Below are some of my favorite snacks and foods I have found on my new journey, and I'm hoping this can help someone else who may be just starting theirs.

    1.  BARILLA GLUTEN-FREE SPAGHETTI

I've tried many brands of gluten-free pasta but nothing can beat Barilla. This seems to be the only brand that I can't taste whether I'm eating gluten or not. They also have a variety of pastas that you can choose from.

    2.  MISSION GLUTEN-FREE SPINACH HERB WRAPS

Another one of my go to's has been these Mission Gluten Free Spinach Wraps. One trick I've learned is to fry them on a pan to get the same texture you would with a non gluten-free wrap. I tend to make wraps, paninis, and even sometimes quesadillas. These are delicious!

    3.  FRUITS & VEGGIES

When becoming gluten-free, it is easy to focus on what replacements you have to make for your carbs, but you can't forget about your fruits and veggies! Eating clean and having a daily intake of fruits and veggies will help strengthen your body and keep you healthy. This will also help your weight control when switching diets.

    4. GLUTEN-FREE OREOS

One of my all time favorite snacks, OREOS!!!! January 2021 Oreo released new gluten free Oreos that I was so excited to try. They taste the same as regular Oreos and this addictive snack will be stocked in my pantry!

    5. TRADER JOES GLUTEN-FREE PUMPKIN PANCAKE MIX

It doesn't have to be October to enjoy these amazing pumpkin pancakes. This is my go to weekend breakfast that I never want to run out of. This is a good way to switch up a normal breakfast routine.

We Can Enjoy a Guilt Free Super Bowl Party, By: Kailey Flaherty

Year after year we attend super bowl parties and binge out on all the typical snacks and dips which are enjoyable in the moment but leave us feeling awful afterwards. This year I have decided to enjoy a guilt free super bowl party with snacks that will leave me feeling satisfied yet healthy. This super bowl Sunday, my friends and I will be enjoying some recipes from my mom including homemade guacamole made with asparagus as well as butternut squash hummus. These dips will be fun for my friends and I to make and feel good about enjoying during the game, and we hope to inspire others to try and do the same.
To make the asparagus guac you will need:

    • -  A pound of asparagus chopped into one inch pieces

    • -  A half cup of unflavored fiber or protein powder (although this is optional)

    • -  One minced clove of garlic

    • -  One large avocado

    • -  1⁄3 chopped red onion

    • -  1⁄3 chopped tomato

    • -  3 tablespoons of lemon juice

    • -  Half a tablespoon of salt

    • -  2 tablespoons of cilantro

    • You will want to boil the asparagus in a saucepan with water for 3-5 minutes, and then blend the tender asparagus

    - In a large bowl mash the avocado and then mix in the other ingredients and enjoy

To make the butternut squash hummus you will need:

    -  2 cups cubed butternut squash

    • -  1/4 cup raw tahini

    • -  1 tablespoons of minced garlic

    • -  1 tablespoons of extra virgin olive oil

    • -  1 tablespoons of water

    • -  1/3 cup fresh lemon juice

    • -  1/2 tsp cumin

    • -  1/2 tsp cayenne pepper

    • -  salt and pepper, to taste

    • -  red pepper flakes (optional if you enjoy spice)

After you have all your ingredients, you will want to cube and roast the butternut squash on 425 degrees fahrenheit for 25 minutes, allow it to cool and then blend all ingredients in a food processor. After this you can garnish with red pepper flakes or add more seasoning to taste and enjoy.

Both of these dips are vegan, delicious and guilt free paired with your choice of chip or vegetable.
