Year after year we attend super bowl parties and binge out on all the typical snacks and
dips which are enjoyable in the moment but leave us feeling awful afterwards. This year
I have decided to enjoy a guilt free super bowl party with snacks that will leave me
feeling satisfied yet healthy. This super bowl Sunday, my friends and I will be enjoying
some recipes from my mom including homemade guacamole made with asparagus as
well as butternut squash hummus. These dips will be fun for my friends and I to make
and feel good about enjoying during the game, and we hope to inspire others to try and
do the same.
To make the asparagus guac you will need:
-
- A pound of asparagus chopped into one inch pieces
-
- A half cup of unflavored fiber or protein powder (although this is optional)
-
- One minced clove of garlic
-
- One large avocado
-
- 1⁄3 chopped red onion
-
- 1⁄3 chopped tomato
- 3 tablespoons of lemon juice
- - Half a tablespoon of salt
-
- 2 tablespoons of cilantro
-
You will want to boil the asparagus in a saucepan with water for 3-5 minutes, and then blend the tender asparagus
- In a large bowl mash the avocado and then mix in the other ingredients and enjoy
To make the butternut squash hummus you will need:
- 2 cups cubed butternut squash
-
- 1/4 cup raw tahini
-
- 1 tablespoons of minced garlic
-
- 1 tablespoons of extra virgin olive oil
-
- 1 tablespoons of water
-
- 1/3 cup fresh lemon juice
-
- 1/2 tsp cumin
-
- 1/2 tsp cayenne pepper
-
- salt and pepper, to taste
-
- red pepper flakes (optional if you enjoy spice)
After you have all your ingredients, you will want to cube and roast the butternut squash on 425 degrees fahrenheit for 25 minutes, allow it to cool and then blend all ingredients in a food processor. After this you can garnish with red pepper flakes or add more seasoning to taste and enjoy.
